Winter Curry Stew

This Winter Curry Stew recipe is delicious any time of year and especially on cold winter days.

Curry powder is a blend of widely varying spices based on South Asian cuisine. It is used primarily to flavor meat, fish, and vegetables. The main ingredients in curry powder are coriander, turmeric, cumin, fenugreek, and chili pepper. Depending on the recipe or region, it may also include ginger, garlic, fennel, caraway, cinnamon, clove, nutmeg, black pepper, ground mustard, or cardamon.

To create your own blend of curry powder, combine the following. Then add a few more spices from the list above to truly make it your own.
2 T cumin
1 tsp coriander
1/2 tsp turmeric
1/2 tsp ginger
1/4 tsp cayenne
1/4 tsp cinnamon

Curry Stew Ingredients:

2 T coconut oil
1 medium onion, chopped
5 garlic cloves, minced
2 tsp curry powder (your personal blend from above)
1 tsp ground cumin
1 tsp ground coriander
1⁄2 tsp turmeric
1⁄2 tsp cinnamon
Pinch cayenne pepper
2 sweet potatoes, peeled & cubed
2 C tomatoes, diced (14 oz can)
4 C kale or spinach, chopped
3 C garbanzos, cooked (2 cans)
1 C water
Sea salt and pepper to taste

Instructions:

  1. Heat coconut oil in a large skillet over medium heat. Add onions and sauté until soft (~5 minutes).
  2. Add garlic and spices. Sauté 1 minute.
  3. Add sweet potatoes and tomatoes. Simmer over low to medium-low heat until tender (15-20 minutes).
  4. Add kale, garbanzos, water, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 5 minutes.

Coriander – A member of the Apiaceae (parsley) family. A common spice used in many Latin American, Indian, Ethiopian, Arabic, and Thai cuisines. The leaves of the plant are known as cilantro. Considered antibacterial, diuretic, antispasmodic, antioxidant and a stimulant. It helps to control blood sugar, cholesterol, and free-radical production.

Kale – A member of the Brassica family. Rich in antioxidant, anti-cancer, and anti-inflammatory nutrients known as glucosinolates. Kale contains an unusually high concentration of carotenoids and flavonoids known to protect the body from oxidative stress. Strong cardiovascular, detoxification, and digestive support.

Turmeric – A member of the Zingerberaceae (ginger) family. Aids in the digestion of fats and protein. It helps stabilize the body’s microflora, inhibiting yeast overgrowth. Sensitizes the body’s cortisol receptor sites. Used in treating candida, arthritis, bloating, eczema, nausea, and high cholesterol and considered anti-inflammatory, antifungal, analgesic, anti-microbial, antiseptic, astringent, and stimulant.
