Pucker up!

Apple cider vinegar (ACV) has been used as a home remedy for centuries. It is made from an assortment of whole, fresh, pressed apples. As the fresh juice ages in a sealed container, the natural sugars ferment to produce alcohol. Now considered “hard” cider, it is left to ferment a second time; this time while being exposed to air. During the second ferment, the alcohol changes to acid, and the end result is vinegar.

Some consider ACV pure magic. It can kill bacteria, is a natural preservative, may help lower blood sugar levels, and has been used to relieve skin irritation. It is packed with healthful enzymes, vitamins, minerals, and essential amino acids that can support digestion, calm arthritis pain, and boost the nutrients needed for proper brain function. As little as a teaspoon a day can supply ample building blocks needed for good health.

The best way to incorporate ACV into your diet is to use it in cooking. Here are a few ideas to get you started.

  • Splash ACV on fresh greens along with extra virgin olive oil
  • Mix 1-2 tsp in 8 oz of sparkling water and a little fruit juice
  • Sip 1-2 tsp in 8 oz hot water with honey

And my newest favorite…

  • ACV gummies

Ingredients:
3/4 C strong green tea, divided
3 T grass-fed gelatin powder (My preferred brand is Great Lakes Gelatin Co.)
3 T honey or maple syrup
1/2 C + 2 T apple cider vinegar (My preferred brand is Bragg.)

Instructions:
Brew tea and let it cool to room temperature.

Mix 1/4 cup of tea and 3 tablespoons gelatin powder in a small bowl. Let the gelatin expand or “bloom.”

Add the remaining green tea, ACV, and sweetener (honey or maple syrup) to the gelatin mixture.

Place the bowl with the gelatin mixture in a pan of water (double-boiler style). Slowly heat to medium temperature, stirring until the gelatin dissolves. Do not boil.

Pour the gummy mixture into a shallow bowl.

Refrigerate until set; about 40 minutes.

Cut into 1/2 inch squares.

Refrigerate uneaten gummies.
